Lentil Soup With Macaroni

Lentil soup is another Gunsay family staple. It's fast to prepare, and very hearty. It goes great with pita bread.

You can make just the plain recipe with lentils, cumin, salt and lemon juice, or make it more into a stew by adding tomato sauce, dices potatoes, carrots, or pasta shells.

Ingredients

2 cups lentiles - any type
1 tablespoon freshly ground cumin
1 tablespoon salt
1 lemon
1 diced potato (optional)
1 carrot (optional)
8 oz tomato sauce (optional)
1 cu p noodles or shell pasta (optional)
1/2 bunch celantro (optional)

Directions

Cover lentils with 3 inces of water in a large pot and bring to a boil. Cook for about 10-15 minutes in a pressure cooker.

Add salt, cumin, and any other optional ingredients. If adding potatoes cook until potatoes are soft enough.

Before serving sqeeze and mix in the juice of one lemon. Garnish with celantro.
