Pita Bread Recipe

Pita Bread

This should be started about 2 hours before you want to eat. Make extra so that you can have them for lunch.  Pita bread pockets are great breads for falafel or tuna fish sandwiches.

Ingredients

2 cups wheat flour
2 cups  white flour
1 3/4 cups water
2 teaspoons yeast
1 tablespoon sugar
2 teaspoons salt

Directions

Mix yeast and sugar with one cup of water in a bowl and let sit for 10 minutes.

Mix in 1 cup of wheat flour, and let sit for 30 minutes, until the mixture is frothy. 

Heat oven to 450°F.

Mix in remaining flour, water and salt, and kneed for 10 minutes.  Cover the bowl and let it raise for 1 hour until the mixture doubles in size. 

Separate into 8 equal balls, cover with a damp cloth, and let the balls rest for 10 minutes. 

With a rolling pin, roll out each ball to about 1/8 inch thick.  Bake for 5 minutes until they puff up into balls.
