Lamajun Recipe



We've had some great Lamajun on our trips to Istanbul.

Ingredients

3 roma tomatoes
1/2 Lb ground lamb or beef
1 small white onion
1/2 cup fresh parsley
2 teaspoons paparika
1 teaspoon red pepper flakes
1/2 teaspon salt

Directions

Prepare the pita bread recipe.

Combine diced tomatoes wtih finely diced white onion, and mix together with meat, parsely, spices and salt.

Let mixture sit for at least 30 minutes while the bread is rising so that flavors combine.

Roll out pita bread balls as thin as possible, and spread a thin layer of the the mixture over the dough. Cook at 450deg for 7 minutes.

If you weight a few minutes before eating, or stack them for a few minutes, they will become more soft as the moisture from the center flows outward toward the dry crust. However, it's often hard to wait.

Serve with yogurt garlic sauce, thinly sliced red onion, tomatoes, and thinly sliced cucumber. Place these on top and fold the lamajun like a taco and eat. Drips of lemon juice on top also enhance the flavor.
