Zucchini Fritter Recipe

Zucchini fritters are a great vegetarian center piece dish, and can be used to replace meat in a meal like falafels.

Ingredients

4 cups grated zucchini
2 tablespoons chopped fresh dill (or dried)
2 tablespoons chopped Italian parsley
3 eggs
1 tablespoon paparika
1/2 teaspoon salt
8 oz crumbled feta cheese
1 cup besan (ground chickpea flour)

Directions

Place zucchini in a colander and press out any water. Mix all ingredients in a bowl until it becomes a batter.

Heat oil in a frying pan, and drop batter into the hot oil. Cook fritters until they are gold brown, about 5 minutes.

Serve with a garlic yogurt sauce.
