Yogurt Pasta Recipe

We have a daughter that will not eat tomatoes, unless they are in catsup. This is the one type of pasta that she will eat. This recipe has Turkish and Greek origins, and is similar to Manti.

Any type of pasta can be used. We normally make our own from scratch, with our pasta maker. It's essential that you use quality greek yogurt, not the fake plain yogurt that has gelatin in it.

Ingredients

1 red onion thinly chopped
2 cups authentic greek yogurt
2 cloves minced garlic
1 cup hot water from pasta bath
1 bunch chopped fresh herbs: majoram, mint, oregano, parsley, and/or thyme
4 servings pasta

Directions

Boil pasta.

While pasta is cooking, in a skillet brown the chopped onion. Mix yogurt, garlic, herbs, and hot water from cooking pasta together in the skillet When pasta is done, transfer it to the sauce pan, and mix to coat the past with the yogurt sauce.

Serve with drips of spicy melted butter sauce, made from 1/4 cup butter, and 1/2 teaspoon paprika, and 1/2 teaspoon cayenne pepper.
