Wet Meatball Soup RecipeThis is known as Sulu Kufta Chorbasi in Turkish. The English translation is sort of funny in that the wet part is sort of redundant, given that it's a soup. This is amazingly tasty, and has many layers of texture and flavor. Ingredients Meet Balls:
Broth:
Directions Wisk the egg and lemon juice together, and set aside. This mixture will be added to the broth right before serving it. Prepare the broth by adding all of the remaining ingredients into a pot. Puree the onion in a food processor, or grate it by hand if you don't mind tears. Squeeze out all of the excess onion juice so that just the pulp is left. Kneed all of the meatball ingredients, and form into 1 inch meatballs. Roll the balls in white flour, and place into the broth. Cook for 10 minutes, and then add diced carots and potatos, and cook for another 20 minutes. Before serving, vigorously stir the soup as you slowly pour the egg lemon mixture into the pot. The egg mixture should merely color the broth white, and not turn into strings. |
