Volcano Pancakes

Volcano pancakes are a fun and tasty breakfast for kids. The preparation time is very fast, so you whip them up in a few minutes. I've adapted it to make it slightly more healthy, by replacing milk with water, white flour with wheat flower, and reducing the butter. The vanilla isn't necessary, but it just makes everything smell so nice.

Ingredients

1 cup wheat flour
1 cup water
6 eggs
1 teaspoon vanilla
1/4 cup butter

Directions

Preheat the oven to 450 °F

Melt butter in a 13x9 baking pan. If using a glass baking pan, melt in the microwave; if metal, then you can melt it in the oven.

Blend all remaining ingredients in a blender for 30 seconds. Pour mixture into the pan with the melted butter.

Cook for 25 minutes, until lightly brown and puffy.

Serve immediately with chopped frozen strawberries and fresh ripe bananas. The bananas add sweetness.
