Udon Noodles Recipe

Cut Udon Noodles

Big meaty Japanese udon noodles are a great compliment to hot pot. They are remarkably fast and easy to make.

Ingredients

5 cups white flour
1 tablespoon salt
1 1/2 cups water

Directions

Boil water in a large pot (4 quarts).

In a bread mixer bowl combine flour, and salt and mix. Pour in water and mix and knead for 10 minutes. Let the dough rest for an hour or more, so that it forms gluten.

Divide dough into 4 parts. Roll balls to 1/8 to 1/4 inch thick, and sprinkle with flour. Fold into 3rds, and use a knife to slices the folds into 1/8 inch thick noodles. You can unfurl the noodles prior to cooking, or just let them unfurl in the water. About 10% wont unfurl, if you don't unfurl them prior to cooking.

Drop noodles into water and cook them until they are soft for about 5-10 minutes.
