Tapioca Pudding RecipeWe like like to call tapioca, "happy-oca" because it's so satisfying, without the sugar high. Ingredients
Directions In a saucepan with medium heat, mix honey, milk and tapioca, with a wisk. In a separate bowl beat the egg. After the tapioca begins to boil, spoon the hot tapioca milk into the egg bowl. Stir after each addition. After about 10 spoons, the egg mixture can be poured and stirred into the saucepan. Cook until it is thick. Stir in the vanilla right before pouring into individal bowls. Serve with sliced strawberries or other fruit. VariationsYou can replace some of the liquid with different types of fruit pure. Passion fruit adds a nice flavor. Rehydrated dried apricots that have been puréed in a blender is also a nice addition. Try raspberry purée too. |
