Strawberry Shortcake Recipe

This is a fast and tasty treat that's reasonably healthy, and a great way to use in season strawberries.

Ingredients

2 cups wheat flour
2 tablespoon sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup coconut oil
1 egg
2/3 cup milk

Directions

Preheat oven to 450°F

In bowl combine flower, sugar, baking powder, and salt by mixing.

Using a hand mixer, mix in the coconut oil.

Mix in the milk and egg.

Drop about 8 dollops of the batter on a cookie sheet, and bake for 17 minutes.

Serve by slicing biscuits in half and covering the sides with sliced strawberries and optionally whipped cream.
