Ingredients

3 packs of 10 oz chopped frozen spinach
1 roll filo
1/2 cup olive oil for brushing filo.
8 oz feta cheese
3 green onion stocks
1 egg
2 tablespoons dill

Directions

Heat oven to 350°F.

Thaw spinach overnight or in a microwave oven. Press out all the juice so that the spinach is dry. Mix crumbled feta cheese, egg, chopped green onion stocks in a bowl and set aside.

Carefully unroll filo. Brush oil on the bottom of a glass 13x9 baking dish. Place a sheet of filo in dish, and brush oil over the top. Repeat the proces with about half of the filo sheets. Use any torn sheets on the bottom layers, and save the nice ones for the top. Evenly spread the spinach mix onto the filo layers and press down the spinach so that it is smooth. Layer the remaining filo sheets onto the top of the spinach mixture, brushing each layer with oil. When done layering, make two length wise scores into the borek. The scores, allow the borek to be cut more easily after being baked.

Bake at 350°F for one hour. Cut into 3 inch squares to serve. It can be eaten hot or room temperature. It tastes even better the second day after being made.
