Spicey Carrots

This is a great side dish which goes with nearly any meal.

Ingredients

4 large carrots
1 teaspoon cumin seeds
1 tablespoon minced fresh ginger root
1 tablespoon minced green chiles
1 teaspoon ground coriander
1/4 teaspoon ground tumeric
1 tablespoon dill
1/4 teaspoon salt
1 tablespoon avacodo oil (or other vegetable based oil)

Directions

With a mandolin make julian carrots, and set aside. In a small skillet, heat a bit of oil and toast the cumin seeds until they begin to pop. Add ginger, chiles coriander, and tumeric, and cook for a minute. Then stir in the carrots, so that they are coated with the oil sauce. Turn off heat and stir in the dill.

Serve with fresh dill sprigs, or cilantro.
