Pozole Recipe



This is a very fast meal low effort meal, that tastes great. Top it with veges such as carots, radishes, kale, sprouts, and avocado or guacamole. This is also a great meal fo the crock pot that can be prepared in advance. Serve with warm corn tortillas. Use large mild chiles for the broth.

Ingredients

6 large ancho chiles and/or california chilis
14 ounce can hominy
1 onion
1 LB cubed chicken or pork
1 teaspoon salt
1 tablespoon oregano
3 bay leaves
1 teaspoon ground cumin

Directions

Hydrate chilis in a bowl of water. Microwave until boiling. When soft remove stems. Blend them with the water in a blender until pureed.

Fry diced onion, and then add all ingrediants to a large soup pot or crock pot, and and simmer for at least an hour.

Serve with toppings: carots, radishes, kale, sprouts, and avocado or guacamole.
