Pork and Rice Noodle Soup Recipe

This is a very tasty asian rice noodle soup, and is fast to make.

Ingredients

1 Lb Ground Pork
1 large carrot Sliced
8 cloves garlic (sliced)
1 teaspoon red pepper flakes
1/4 teaspoon black pepper
1 teaspoon salt
1/2 cup Soy Sauce
1 inch grated ginger
1 tablespoon fish sauce
8 ounces rice noodles
1 cup leafy greens (kale, spinach, snow peas, collards, etc.)
1 green onion sliced

Directions

In a small frying pad with oil fry the garlic slices until crisp. Place in a serving dish as these are used as toppings.

In soup pot brown the pork, red and black pepper, salt and carrots. Add about 6 cups water, soy sauce and fish sauce. Simmer 15 min.

Add in greens, fish sauce, and noodles, and simmer until noodles are al dente.

Serve in bowls with cilantro, sliced onions, and crispy garlic slices
