Peanut Butter Sand Cookie Recipe

We stumbled upon this recipe, when we added corn meal to the mixture and not enough liquids. The cookies were light crumbly, gritty like sand, and delicious. We use coconut oil in place of butter which gives a tropical flavor, and is nice because it doesn't need to be softened like butter that is used in more traditional recipes. The corn meal gives it a gritty texture which feels good on the teeth.

Ingredients

1/2 cup brown sugar
1/4 cup coconut oil (or butter)
1/4 cup peatnut butter
1 egg
1 1/4 cup wheat flour
1/4 cup corn meal
1/2 teaspoon baking powder
1/2 teaspoon baking soda

Directions

Heat oven to 375F.

Mix sugar, coconut oil, peanut butter and egg until smooth. Add Flour corn meal and baking power and soda, and mix. The mixture will be a bit crumbly, and may need to be combined by hand. Roll into 1 inch sized balls and place on an ungreased baking sheet. Take a fork and press down to flatten balls and create a cross pattern.

Bake for 13 minutes, until slightly brown on top.
