Onion Bhajis

Indian food is a natural choice for vegetarians, because it makes vegetables taste good without meat.

We generally replace any meat in Indian curries with cauliflower to make the meal more healthy, but it often feels like something is lacking from the meal. Onion bhajis are a common appetizer at Indian restaurants, but we use them as the center piece of the meal, and a meat substitute.

Other vegetables other than onions can be used in addition to onions, such as carots, squash, or cauliflower.

Ingredients

3/4 cup basan (chickpea flour)
2 teaspoons ground coriander
2 teaspoons ground cumin
1/2 teaspoon salt
1/2 cup warm water
1 tablespoon minced chili pepper
1 large onion finely sliced

Directions

Mix besan, spices and water and minced chili peppers in a bowl to form a batter. Slice the onions as thin as possbile, and mix in with the batter. Let sit for a half hour so that the onions wilt. The warm water aids in this process.

Heat oil in a pan and drop blobs of batter and onions into it. Cook until golden brown.

Serve with the main meal.
