Directions Saute onion and carrots in olive oil until somewhat tender. Add garlic and cook until fragrant. Season with salt and pepper. Add tomatoes, zucchini and water. Bring to a boil. Add pasta and cook until al dente. Add tomato paste, beans and basil. Cook until vegetables are all tender and flavors have combined. Add extra water if needed. Serve with grated Romano cheese if desired. |
