Greek Salad RecipeThis is a flavorful and healthy side dish that is an excellent compliment to kufta or other meat dishes. During harvest time in the fall, we often have a surplus of tomatoes, onions, cucumbers, bell peppers and tomatoes and don't know what to do with them all. This dish is the perfect solution for using harvest vegetables. Ingredients
Directions Process the cucumber,onion, and bell pepper with a mandolin. A knife can be used, but a mandolin is much faster and cut everything much thinner. Dice the tomatoes with a knife into half inch cubes. Ripe cherry tomatoes cut in half are perfect for this dish. Mix all the sliced vegetables, salt, oil, lemon juice, and oregano together in a bowl. Top off with crumbled feta cheese. Don't mix in the feta cheese as it turns the liquids milky looking. |
