Greek Salad

This is a flavorful and healthy side dish that is an excellent compliment to kufta or other meat dishes.

During harvest time in the fall, we often have a surplus of tomatoes, onions, cucumbers, bell peppers and tomatoes and don't know what to do with them all. This dish is the perfect solution for using harvest vegetables.



Ingredients

1 cup thinly sliced cucumbers
1 cup thinly sliced onions
1 cup thinly sliced bell peppers
1 cup diced tomatoes
1 lemon
1/4 cup olive oil
1 teaspoon dried oregano
1/2 teaspoon sea salt
1/4 cup crumbled feta cheese

Directions

Process the cucumber,onion, and bell pepper with a mandolin. A knife can be used, but a mandolin is much faster and cut everything much thinner. Dice the tomatoes with a knife into half inch cubes. Ripe cherry tomatoes cut in half are perfect for this dish.

Mix all the sliced vegetables, salt, oil, lemon juice, and oregano together in a bowl. Top off with crumbled feta cheese. Don't mix in the feta cheese as it turns the liquids milky looking.
