Vegetarian Galanga Soup Recipe

Galanga Soup

Most Thai galanga soup recipes use chicken and sugar as ingredients. I've modified the recipe to make it vegetarian. Even our most picky kids like this soup. This soup is very flavorful, and quick to prepare.

Not all coconut milk is created the same. Some is more like white water. The fat content can range from 4% to 26%. Choose milk with higher fat content, and calories. You can always water it down if needed.



Ingredients

two 15 oz cans Coconut milk
1 cup water
10 kaffir lime leaves
6 pieces dried galanga chunks
2 carrots
4 medium white or red potatoes with skins
3 tablespoons fish sauce
3 tablespoons lime juice
1 tablespoon honey

Directions

Dice carrots and potatoes. In a medium sauce pan, simmer coconut milk, water, galanga, kaffir lime leaves, galanga, carrots, and potatoes. When potatoes have cooked, add fish sauce, lime juice and honey.

Garnish with cilantro, and thinly sliced red bell pepper. For a complete meal, serve with rice, placing rice at the bottom of the bowl.

The dried galanga, and lime leaves should be removed, and not eaten. We often leave them in, and tell our kids that they are surprises so that they can find them and take them out.
