Fish Stew Recipe

This is extreemly flavorful, and we fell in love with it the first time we had it.

Ingredients

1/4 cup lime juice
2 tablespoons ground cumin
2 tablesppons paprika
4 cloves minced garlic
2 teaspoons salt
2 teaspoons ground black pepper
1-2 pounds fish fillets cut into chucks (salmon, tilapia, or other white fish)
   
1/4 cup olive or avocado oil
2 cans coconut milk (15 ounce)
2 cans diced tomatoes (16 ounce)
1 large onion chopped
1 red bell pepper finely sliced
1 bunch of fresh cilantro (optional)

Directions

Mix lime juice, cumin, paprika, garlic, salt and black pepper in a bowl, and marinate the fish in it for 30 minutes up to 24 hours.

Heat oil and cook onions until soft. Add bell peppers, fish and tomatoes in layers. Pour in coconut milk, cover, and simmer for 15 minutes, until fish is cooked.

Serve with fresh cilantro.
