Falafel Recipe

Falafel is another great meat replacement. We often make falafel sandwiches with pita bread pockets.

Ingredients

1 1/2 cups dried chickpeas
1 small onion
1/4 cup fresh Italian parsley (Optional)
4 cloves garlic
2 tablespoons flour
2 teaspoons ground cumin
2 teaspoons salt
1 teaspoon coriander
1/2 teaspoon cayenne pepper
1/4 teaspoon black pepper

Directions

Soak the chickpeas overnight.

Place all ingredients in a food processor, and blend into a coarse paste. The parsley is mainly for color - it turns the interior of the balls into a green color.

Form into 1 inch balls, and fry in oil until golden brown.

Serve warm in pita bead pockets with thinly sliced onion, tomatoes, and cucumber and tahini sauce as a spread.
