Chimichurri Sauce Recipe Recipe

We first had this sauce at a Brazilian churrascaria. It's a must for when we make lamb or beef roasts sometimes on holidays.

Ingredients

3/4 cup olive oil
1/2 cup red wine vinegar
1/2 cup fresh minced cilantro
1/4 cup parsley
2 tablespoons fresh or dried oregano
1 teaspoon salt
4 minced garlic cloves
1 minced shallot
1 hot red pepper

Directions

The ingredients can be minced and chopped prior to combining which gives a better consistency, or can be placed whole into food processor. The sauce is dripped over individual slices of roast.
