Butternut Squash Harvest

After the summer of 2025 we had a ton of of butternut squashes, and didn't know what to do with them. Turns out it's a very versatile food, because the flavor is neutral. For example you can use it in place of potatoes. In this recipe I'm using it instead of onions to make Bhajis.

Butternut is extremely nutritious and is packed with vitamin A, C, E and potassium and magnesium. Cooking it with oil makes the vitamin A more easily absorbed, as it is oil soluble.

Ingredients

2 cups butternut squash, Julienne sliced with a mandolin
3 green onions sliced
1.5 cups besan (chickpea flour)
2 teaspoons ground coriander
2 teaspoons ground cumin
1/2 teaspoon salt
1/2 cup warm water
1 tablespoon minced chili pepper

Directions

Mix Julienne besan,green onions, spices,salt and water and minced chili peppers in a bowl to form a batter.

Heat oil in a pan and drop blobs of batter and onions into it. Cook until golden brown.

Serve with the main meal.
