Butternut Squash Bhajis![]() After the summer of 2025 we had a ton of of butternut squashes, and didn't know what to do with them. Turns out it's a very versatile food, because the flavor is neutral. For example you can use it in place of potatoes. In this recipe I'm using it instead of onions to make Bhajis. Butternut is extremely nutritious and is packed with vitamin A, C, E and potassium and magnesium. Cooking it with oil makes the vitamin A more easily absorbed, as it is oil soluble. Ingredients
Directions Mix Julienne besan,green onions, spices,salt and water and minced chili peppers in a bowl to form a batter. Heat oil in a pan and drop blobs of batter and onions into it. Cook until golden brown. Serve with the main meal. |
